Today we want to talk about Ibizan gastronomy. Although Ibiza is not a very large island, it has an extraordinarily rich gastronomy. The variety of products from its fields, the fish and seafood from its waters and the local livestock have created an extensive recipe book, typical Mediterranean cuisine, with influences from the different civilizations that populated the island, and which is a great attraction. We want to present several typical and delicious dishes that you can taste in numerous restaurants and local food shops.
Bullit de Peix (Fish Stew)
Bullit de peix is one of the most emblematic dishes of Ibiza and perhaps the most popular. It is a fish stew with different types of fresh fish from the area such as John Dory, sea bream, grouper or scorpionfish. The fish are accompanied by boiled potatoes and a smooth ‘all i oli’ sauce that covers all the ingredients. The fish broth is used to make an exquisite rice, usually a banda, which is served as a second course; without a doubt a spectacular combo full of flavour.
Paella ibicenca (Ibizan paella)
Although there are many varieties of paella, they all have one thing in common: they are made with a good ‘fumet’, which is the broth obtained by boiling rock fish. All paellas use fresh fish and seafood from our waters and top quality ingredients. An explosion of sea flavour that leaves no one indifferent.
Frita de pulpo (Fried octopus)
In Ibiza we are very fond of octopus. Fried octopus or grilled octopus are two delicious dishes. It is usually accompanied with boiled potato, peppers, onion or mashed potato, depending on the recipe. You can also accompany it with special garnishes, depending on the restaurant.
Ensalada de ‘crostes’ (Toast salad)
‘Crostes’ are pieces of country bread, which are toasted until they become crispy. They are then cut into pieces and used to prepare a salad with tomato and other ingredients, such as onion, garlic and fish.
Ensalada payesa (Country salad)
The country salad is not a typical lettuce salad, but rather a hearty first course made with boiled potatoes, hard-boiled eggs, roasted red peppers, tomatoes and onions. All of this is seasoned with extra virgin olive oil and Ibiza salt. Although it is more of a summer dish, it is also consumed the rest of the year.
Coca de pimientos (Pepper coca)
The typical Ibizan coca can be found in practically all the bakeries and pastry shops on the island. It has a base made with flour dough, egg and olive oil and is usually topped with roasted peppers and olives, although other combinations are allowed. Everything is baked and is a delicacy at any time of day.
Flaó
An emblematic dessert made with goat and sheep cheese and mint. It can be found in many restaurants and bakeries; without a doubt a typical Ibizan delicacy.
Greixonera
The Ibizan version of pudding, which is made with ensaimadas or bread (usually from previous days), milk, eggs and cinnamon, among other ingredients. A sweet, soft and delicious dish. For us, it is our favorite dessert.
Hierbas ibicencas (Ibizan herbs)
This liqueur made from aromatic plants fermented in anise is delicious and very digestive. There are several commercial brands that sell this drink. The most famous and traditional is Marí Mayans. There is no self-respecting meal that does not have a shot of herbs after dessert!
Café Caleta (Caleta Coffee)
An exquisite flavoured coffee that the old fishermen made before going out to fish with brandy, cinnamon, lemon peel, orange and coffee beans. A delicious coffee that you cannot miss. Not all restaurants have it, so if the waiter offers it to you, do not miss the opportunity to try it.
